Summary This project developed competency frameworks for specific job roles in food and drink service.
This partnership was made up of VET organisations from five countries with a thriving or developing tourist trade. These are Poland, Romania, Greece, Italy and the UK. It has sought to share expertise in developing solutions in terms of the identification and validation of competences in food and drink service.
It has explored within the partnership and with wider industry representatives a skills, knowledge and competency approach emanating from a task-based starting point and has developed competency framework specifically for food and drink service staff in formal restaurants. The original framework has been validated by observations and interviews in all partner countries to ensure that it is appropriate in a multi-cultural environment. The final framework contains the common key skills and competencies for five roles within food and bar service. In each partner country, further work has been done in investigating how these competences, skills etc are acquired and the role of validating informal learning for their recognition. This project has been seen to be complementary to a TOI project – Eipil-Pan and has been disseminated often in conjunction with this project which has procedures and instruments in place for the validation of informal learning in the workplace.
Further rudimentary work has been done in linking the identified skills, knowledge and competences for each role into EQF level(s).
The resulting framework and associated informal and non-formal learning processes, with appropriate validation procedures has been disseminated widely with dissemination workshops being held in all partner countries.
