The project is dedicated to the transfer of methodology and development of a new product of a higher quality with benefits in many fields, which after adaptation will be introduced in the VET system of the partners. A methodological and technological knowledge will be transferred from Czech Republic to Bulgaria and during the project this knowledge will be upgraded and shaped to match the requirements of the VET system. The innovation is a specific malting process, suitable for less widespread culture–einkorn, which has proven qualities superior to other varieties. During the project many researches will be held and the methodology will be adapted for the specifics of the variety. After verifying the overall process the adapted knowledge will be turned into curricula.
The main target groups are trainers and trainees in the VET system focused in the agriculture sector. Through the realization of the project, the competitiveness of the people on labor market which will pass the courses will be increased. Moreover it will raise the attractiveness of the professional education centers of the partners through the provision of specific and innovative knowledge. Also representatives of the food & beverage industry can benefit by employing the carriers of this specific knowledge which will in turn bring them market advantage.
The consortium is based on highly reputed and experienced partners who will contribute to the successful implementation of every project stage and will make sure that the final results will match the expectations and the highest quality criteria.
P3 is a key partner to the consortium that has the appropriate methodology for wheat malting which is applicable after adaptation for malting einkorn in Bulgaria.
P0 provides a scientific team which will get educated and after that further develop and adapt the knowledge to their VET system according to its specifics.
P2 is a scientific research body which owns laboratories for micro-studies of grain and will support the activities carried out by P0.
P4 is business consulting company with a focus on innovation management and technology commercialization aiming at overcoming the gap between science and business and strengthening the link education-business.
P1 is a private company, registered as organic farmer. It will provide certified testing ground and will be responsible for the project management and coordination. It has experts in its team with serious background in EU project implementation, especially LdV projects.
The tangible results expected will be the envisaged end products from einkorn planting, malting and brewing and the educational methodology as well. The intangible results lie in the possibilities granted after the utilization of the new culture which could lead to a sectorial development and professional realization for the people on the labor market.
This project will have positive impact to the VET system and will provide opportunities multispectral application.
Description This project seeks to focus on a new type of product based on the revival of an ancient variety of wheat - Einkorn, the transfer of a specific methodology for its processing and its implementation in the Bulgarian and foreign partners VET systems. Einkorn very old cereal with proven properties but with smaller produce. This project will strengthen the links between business and VET system, by transferring, adapting and implementing the processing methodology of malting einkorn in the educational program of Centre for Professional Training of the Agricultural Academy in Sofia and all other interested stakeholders, through development of professional training program and creation of qualified specialists in agricultural and food industry, which will result in increased employment.

Product information he main aim and objective of the project is tо obtain biologically active malt from Einkorn for use in the food industry – brewing, baking and confectionary and to disseminate the knowledge via the VET system in Bulgaria and abroad. There is evidence for the use of Einkorn flour in the baking industry, but there is no data on the use of Einkorn as malt. This statement is based on consultations with Union of brewers in Bulgaria (www.pivovari.com/chlenove ) and other professional partners of the Agricultural academy. The methodology which will be transferred is most appropriate for malting of the variety of einkorn in Bulgaria. Obtaining biologically active malt from Einkorn is new to our country. Different modes of malting and brewing will be tested.
