Description The task 3.1. Providing samples of the selected traditional products is ongoing. Until now, batches of traditional food samples were collected from the category: sugar-free plum jams (around 10 brands from Romania), 5 traditional Portuguese cheeses and 3 traditional wines from Portugal and some prepared traditional foods from Spain: pisto, meat balls, artichoke and iberian ham . They were stored in the optimal conditions and were analyzed for sensorial, physico-chemical and textural point of view. This task will continue to collect and to analyses more products in order to establish sensorial methodologies to measure the authenticity in task 3.2.
