In Tol4food project the consumer driven definition of the TRUEFOOD project with some slight variations was adopted: “Traditional foods have been defined by European consumers as food products that are well-known, that one can eat often and that were eaten already by our grand-parents. A traditional food product is a product frequently consumed or associated to specific celebrations and/or seasons, transmitted from one generation to another, made in a specific way according to the gastronomic heritage, naturally processed, and distinguished and known because of its sensory properties and associated to a certain local area, region or country. Although traditional foods are less strongly associated with being "natural and low processed" Tol4food will offer innovative solutions for increasing their nutritional and healthy properties.”
Specific criteria for products selection was chosen: at least 25 years old, well-known, authentic recipe, specific sensory properties, authentic and original raw materials, products prepared in the grandparents’ way, authentic production process, they have a story and a tradition etc.
More than 170 traditional food products from different categories (bakery, fruits and vegetables, wine, meat, dairy and meals obtained from them) were collected in accordance with the requirements of Regulation (EC) No. 1216/2007 on traditional specialities guaranteed agricultural products and foodstuffs in the three participating countries (around 70 products from Romania; 50 traditional food products from Spain and 50 products from Portugal). The products have a large distribution around the countries as it can be observed in the maps attached to the database.
For each selected product a short presentation is provided: product name/manufacturer contact details, product region/county/history, ingredients, physical, chemical, sensorial and nutritional properties, preparation procedure as well as a photo.
The database with the 170 selected traditional foods was structured in English and it is available on the project website with the specific information about each product.
The collected products from each country are available also in the respective languages: the Romanian products in RO language, the Spanish products in ES language and the Portuguese products in PT language.
